Cold Lemony Tortellini with Tomatoes and Artichoke Hearts

Another delicious, light, refreshing, healthy, and easy summer weeknight dinner recipe!  I love, love, love this entree!

Serves 2


1 package whole wheat cheese tortellini
1/4 Cup chopped green onions
1/2 Cup halved cherry tomatoes
1 Can artichoke hearts
4 Tbsp olive oil
Splash of white wine
Juice of 1 lemon
1 garlic clove, crushed
Crushed black pepper & salt, to taste
Fresh grated parmesan cheese, to sprinkle on top

Mix all ingredients together, let marinate in the refrigerator at least an hour.  Serve cold.
