A friend hosted a lovely dinner party last weekend and the main dish was beef tenderloin and picanha. Everyone brought a side dish and I did this creamed spinach from The Novice Chef. It was sooooooo easy and delicious, and paired so well with steak and red wine! I used their recipe but added a pinch of nutmeg to it. Trust this recipe and look no further!
(I doubled, but here is her recipe)
3 10-oz bags frozen chopped spinach
2 Tbsp butter
1 Medium yellow onion, diced
6 large garlic cloves, minced
4 oz cream cheese
1 Cup heavy cream
1 Cup shredded mozzarella cheese
1/2 Cup grated fresh parmesan
S&P to taste
1. Cook spinach in microwave according to package. Remove excess water using a towel or a colander. Set aside.
2. In a large skillet over medium heat, melt butter. Add onions and saute until transclucent.
3. Add garlic and cook 30 seconds. Add cream cheese and stir until melted.
4. Add heavy cream and cook for 2 mins. Add mozzarella, parmesan, salt and pepper. (Here is where i added optional nutmeg. About a tablespoon.)
5. Fold in spinach and stir. Serve immediately or make ahead and bake to warm.
